How do you install a new wooden handle on a pitchfork?? Its the kind where the tine has a big spike that you somehow force into a dry oak handle wrapped in steel, with a hole drilled in the wood. Heat it up & force it in quick? ? Seems impossible .....

Not necessary to heat. Make sure the spike is clean and free of rust. You could put a small amount of wood glue on the spike. Start spike into hole and then turn the fork upside down (tines up) and bounce pitch fork up and down on a hard surface,(cement floor) until the tines are seated against the handle.
