Do I find a Dyno and run it under a load for a while or.

See if Stan Borton watill have his Dyno setup at the Oscar's Tractor Show on May 17th 9 to 2 the Iowa Veterans home. He may have her set up there. CM

Since I don't have a dyno, after an overhaul or rebuild I take them out and work them under a load like plowing, disking or mowing

A dyno break in would probably be the absolute best break in, but i'd guess there are literally millions of overhauls have been done without it and do just fine. I would just follow it's original break in guidelines and have fun.
