Hello I was woundering how much is to much to mill of a
head? I had my head plained and he told me he took 10-12
thousands off is that to much or not enough?

Not to much if that's what it takes to make it flat
Better check the block for flatness and sleeve protrusions while your there. All are critical to keeping a gasket in them.
