For you maple syrup makers

Very interesting. Makes me wonder about the phrase "Just doesn't taste as good as it did in the old days". I still prefer the darkest, muddyest, "didn't make Grade A" syrup Loren can send us.
 
This year was my first time making syrup. I made quite a bit and I noticed that as the season progressed, my syrup got darker and darker. The taste was about the same to me anyway. We had a long abnormal season with the cold, waming, and then cold again.

I also have a bunch of black walnut trees. They don't produce as much sap. I made a small batch of black walnut syrup and it was delicious.

really good. Never tried it myself
though. Might be a fun project.

Really good. I think I prefer it actually. It is hard to describe, I wouldn't say "nutty"... but differently different than Maple. Everyone who has tried it loves it. I haven't actually used on pancakes yet, just letting friends take a spoonful to taste.
