I am going to rebuild a hydrapower for our pulling tractor. The rules state that one hand on the steering wheel and one hand on the throttle at all times. I am thinking about using hydraulic servos to control shifting. Is this possible? Any suggestions?

There's a guy in TN who has (had?) a 1950GM that he put a pedal on for the HydraulShift (he swapped). It worked pretty slick for him.
 
I've been pulling for years and about every pulling flyer says about the same thing about keeping your hand on the steering wheel but nobody enforces it-What if you have a hand clutch and a dead man throttle? Don't worry about it-Happy Pulling--Tee

You are probably right, but we got yapped at this year for letting go of the steering wheel before pushing in the clutch at the end of a pull.
