Should a hydraulic winch be operated by a motor control valve instead of a regular directional control valve like the kind typically used for a hydraulic cylinder? I've linked two examples below. I've used both styles and the bi-directional hydaulic motor will operate with either of them. On the first one, you don't have to stand there and hold the lever to get it to work. Is that really the only difference between them?

The lever rotates in a circle one way for forward and the opposite for reverse on the motor valve. The handle moves about 90 degrees each way.

SOME motor control valves allow the motor to coast to a stop, which is important if driving a high inertia load so nothing gets broken from an instant stop of the motor.

Does your winch have a worm drive that will "hold the load" on it's own or a spur gear drive which would release the load with the motor able to freewheel with the control valve centered?
 
Both the valves listed are tandem center. Meaning A and B ports are closed and pump opens to tank in neutral.

Either valve will work the same, but the motor control valve has better speed control as the handle has a larger range of motion. The Prince valve has load checks, which will prevent unwanted movement, but may make fine adjustments in position harder.

It has a worm gear drive.

I wouldn't use a valve with load checks to control a motor. Since the motor can't positively hold a load anyway the checks won't accomplish anything. They will also cause pressure spikes on the return side of the circuit which could be hard on the shaft seal.
 
The two valves I linked to aren't the valves I will be getting, they are simply examples of the two types of valves.
