Issues after 425 cam gear replacement

I just replaced my cam & gear without removing the engine and it went fine. Or so I thought...

Upon assembly I had to keep turning the crank to mesh the teeth on all the gears (water pump, oil pump, ect). I used some EP grease to hold the tappets in and coat the new cam etc.

One thing I messed up is I assumed the tappets would just slide up onto the push rods which I had held up with clips. Apparently there's enough room in the shaft for that not to happen without guidance. I started the motor and everything ran fine. But I heard an occasional "pinging" sound... Felt it coming from the right side valve cover and immediately shut down engine. Took off the valve cover and both rods were off the rocker and not in the tappets. Bent one pretty good.

Got new rods and replaced them but now it only starts and runs fully choked (maybe it did this before and I just shut it down before it warmed up fully). I didn't touch anything on the carb or vacuum lines etc. Could I have messed up the governor when I slid the crankcase cover back on? What else could be causing this? Really confused because all I did was replace the cam w/gear and the water pump. I took the valve cover back off and verified that the rods were still seated correctly and the proper length. It had been sitting for about a year (inside) before I could tear into it. I'm stumped.

Now that I think on it, since it sat for almost a year, I should tear down the carb and make sure the float valve isn't sticking...
