I have several good draw knives, inherited and none for sale. My wife's grandfather made all of his wooden tool handles, single trees, double trees and gambrel sticks. I'm still replacing worn handles with the ones that he made. He died in 1965. My wife, his only grandchild, inherited all of his tools.
I have 2 gambrel sticks hanging in my shop and I have to tell people what they are.

Just happened by the hammer handle dept. in Menards the other
day, & you wouldn't believe the hammer handle prices. Several
styles starting at $12 & up from there. I have several lots of hickory
that I use for handles & rough them out with a draw knife & finish
them with a wood rasp.

A gamble stick is used to hang animals up by the hind legs for dressing or aging the meat. Years ago when we had really cold winters I have seen people leave a deer hanging with the hide on into the winter if it was cold enough to stay frozen. If it wasn't so damn cold I would go get a pic of ours. 👨‍🌾

Thanks, I'd never heard of them. I understand though.
I guess I even used one in about 1963 or so butchering a couple of hogs.... or at least helping.

OK, I'll ask again What are they? I know what a single tree and double tree are.
I am going to brave the cold wind and go to my shop and get you a photo Sir.
Need to build a fire in my shop heater anyway.LOL
They are called gambrel sticks.
Mountain folks around here call them gamblin sticks.

I like that one! I would take you up on your offer but I hate to ask anyone to all of the trouble,I see by the trucks going south today that IA and MN must of had ice and snow Friday and maybe Saturday morning.
OK, I'll make arrangements to go get it, in the next day or two. Once I have it, I'll need an address to ship it to.

PS: I discovered they have 2 of them for sale. This one is a little nicer but is $35. steve
