RGMartin $2.10 Burger Beef

Sir, I am aware that hanging weight does not mean an equal weight of packaged meat. BUT if I sell a one pound package of beef for $2.10, then it seems to me that is $2.10/pound???

That isn't how I read your post. You said $1 for the processing, and 1.10 on the hanging weight.... Equals $2.10. If you are selling the ground beef for $2.10, you are selling it for $2.10 then. At $2.10 you are barely going to cover your processing cost, if that is your goal, good plan, and very kind of you trying to help others out.
