I would pull the bearings out and try them on the spindle without the hub.
They might be too small a diameter or something and not sliding on far enough.

Did you put a different type of seal in it?

Some seals go on the ID of the hub some on the OD of the shaft.

In addition to the good advise UD gave you, also check to ensure the inside (large) races are driven all the way to the flange.

You should be seeing a difference on how far the spindle nut tightens down compared to the original bearings.
