I have a 1951 MM U and swapping motors with a M5, the U has a hand clutch and the M5 has a foot clutch. Does anyone have an idea how difficult it is to switch the clutches from a foot clutch to a hand clutch? Any info would be appreciated.

Just swap flywheels and it will work. But you may run into problems with your steering rod clearing your front cover because the M5 front cover is different. You could always just buy a gasket set and put the M5 blocks pistons and heads on your U crankcase and keep the stock look. Well good luck

Starter will not work if you swap flywheels. You need a power unit flywheel from an early 336 power unit a radiator adapter from a ub diesel and the steering shaft from a ub diesel they will accomadate the later style water pump. I have all this stuff if you need it.
