Buckwheat pancakes

Fur all you that like buckwheat pancakes and don't know where to find good buckwheat. I buy mine on line at Wal-Mart, around here they don't sell it in the stores, but you can go on line and buy it.
The nutritional value of buckwheat is better than regular flour. I have said that buckwheat pancakes are a "MANS" pancake.
I'm oat of the Amish made maple syrup so I use second best, Log Cabin syrup, I remember years ago it came in tin cans that resembled a log cabin, wish I had all those cans, they vould be vorth money to collectors.
Vhen I was a child, we always had buckwheats on sunday morning before ve went to church.
Can any one remember the old Log Cabin syrup jingles?

Vhere do you live?
The local feed mill here at home gits the seed someplace in Louisville, Kantucky. I thinks it comes from sum place in Oh10.
I plant it in the garden vhen I rotate from one patch to another.
 
I just started a new batch of sourdough for pancakes. There's a recipe in my book for sourdough buckwheat pancakes too. I think I'll try them.

What percentage of buckwheat do you use? I have heard that it does not raise, the recipe that I use is about 25% buckwheat and 75% whole wheat. I like them real well, and have them about 3 times a week. I make a big batch once every 10 days and freeze the leftovers, then just thaw them out and microwave. I buy buckwheat flour at our local health food store, Harmony food co-op.
 
all I know is that one time my brother and I were doing the milking for my parents while they were on vacation, we had more buckwheat flour than was required for pancakes but not enough for another batch so we used it up, we didn't eat dinner and didn't have much for supper that night either!
 
We used to buy Hodgson Mills buckwheat pancake mix. It is real good high quality and they are located in Effingham, IL. We now buy flour at Strawberry Fields in Urbana, IL. It is a health food store. I use 1/2 cup buckwheat flour, 1 teaspoon baking soda, 1 egg, and 1/2+ cup of butter milk. It makes about 6 good sized pancakes and the butter milk makes them better that skim milk that I use. I used butter and real maple syrup from Funks Grove that has very old trees. It is located between Bloomington and McLean, IL on old route 66. I only do this when I wake up with real blood sugar or am scooping snow.
 
The recipe is as follows.
3/4 cup original Aunt Jemime pancake mix.
1/3 cup buckwheat flour
1 tablespoon baking flour
3/4 cup milk
1 table spoon oil + 1 egg
Mix dry ingredients together then add milk & egg as package instructs.
 
So you still need some wheat flour in the mix? Neither Marilyn or I can have gluten, which is in wheat, barley and rye. I was hoping I could finally have pancakes if I could get hold of some buckwheat, but it doesn't look like it will happen if some wheat flour is needed. Jim
 
I do same as you with Hodgson Mill mix and add in up to 50% wheat bran. Every thing else stays the same except maybe more buttermilk.
 
When the wife gets up I will have her write down some recipes for gluten free pancakes, she has an intolerance also! Tom
